Slow spice, straight off the tandoor.

Whole spices bloomed in ghee, a dal that sits on the flame for six hours, and breads pulled from a 400°C tandoor only once you have ordered them.

Forty-eight hours of cold fermentation, San Marzano cooked down slowly, and mozzarella torn over the top the moment it leaves the oven.

    Doors open

    The sun is still on the west wall. Stock went on at eleven and has been reducing ever since.

  2. 8 PM

    The room fills

    Every plate fired to order. Nothing waits under a lamp for a table.

  3. 11 PM

    Second wind

    Cooks and bartenders from down the street arrive as their own shifts end.

  4. 1 AM

    Last order

    The board comes down, the grill goes cold, and we start again tomorrow.
